Domaine Eugenie Carrion, Montmains, Chablis 1er Cru

Located in northern Burgundy near Auxerre, the Chablis vineyards are alongside a small river aptly named: the

Serein (“Serene”). located on is a limestone plateau cut by valleys. This wine originated from a better terroir and considered 1er cru.

The grapes are pressed on arrival at the winery using pneumatic presses. The fermentation takes place in stainless steel tanks. The wines are aged on fine lees for about 5 months in stainless steel.

 

Colour : Nice pale golden in colour.

Nose : An intense nose of mineral notes.

Palate : The palate is frank and vivid with a nice minerality underlined by lemon notes. A great structure with a long, pure and fresh finish.

 

Perfect with hot oysters or fish in sauce, but also with white meats in sauce (veal, poultry). Sushi pairs perfectly with its minerality.
